Mumbai-Style Pav Bhaji Recipe

🍅 Ingredients (Serves 4):

For the Bhaji (Vegetable Curry):

  • 2 tbsp Butter or Oil
  • 1 tsp Cumin Seeds
  • 1 medium Onion (finely chopped)
  • 1 tbsp Ginger-Garlic Paste
  • 2 medium Tomatoes (finely chopped or pureed)
  • 1 Capsicum (finely chopped)
  • 2 Potatoes (boiled and mashed)
  • 1 cup Cauliflower (boiled and mashed)
  • 1/2 cup Green Peas (boiled)
  • 1 tsp Aadinath Red Chilli Powder
  • 1/2 tsp Aadinath Turmeric Powder
  • 2 tsp Aadinath Pav Bhaji Masala
  • Salt to taste
  • Water as needed
  • Fresh Coriander Leaves (chopped)
  • 1 Lemon (cut into wedges)

For the Pav:

  • 8 Pav Buns
  • 2 tbsp Butter
  • Pinch of Aadinath Pav Bhaji Masala (optional, to sprinkle on pav)

👨‍🍳 Instructions:

1. Prepare the Bhaji

  • Heat butter in a large pan or tawa. Add cumin seeds and let them splutter.
  • Add chopped onions and sauté until golden. Add ginger-garlic paste and cook till raw smell disappears.
  • Add tomatoes and capsicum. Cook until tomatoes are soft and oil starts to separate.
  • Add mashed potatoes, cauliflower, and peas. Mix and mash everything together using a potato masher.

2. Add the Spices

  • Add Aadinath Turmeric Powder, Aadinath Red Chilli Powder, and Aadinath Pav Bhaji Masala. Mix well.
  • Add water as needed to adjust the consistency and let it simmer for 5–7 minutes. Stir occasionally.
  • Taste and adjust salt or masala as needed. Finish with chopped coriander leaves and a squeeze of lemon juice.

3. Toast the Pav

  • Slice pav buns and toast on a pan with butter until golden. Sprinkle a pinch of Aadinath Pav Bhaji Masala on top while toasting for extra flavor (optional).

🍽️ Serving Suggestion:

Serve hot bhaji in a bowl, topped with a cube of butter, and garnish with chopped onions, coriander, and lemon wedges. Serve alongside toasted pav buns.
